In the early days, the wine was made in a garage converted into a cellar, marking the singular origins of the estate. Over the years, the vineyard has grown to approximately 10.7 hectares, on the clay-limestone plateau of Saint-\u00c9tienne-de-Lisse. The grape varieties are mainly Merlot, complemented by Cabernet Franc and some Cabernet Sauvignon. The grapes are harvested by hand and sorted in the vineyard, then again on arrival at the cellar. Vinification takes place in temperature-controlled stainless steel and wooden vats, with manual punching down and pumping over, followed by a maceration of about three weeks. Malolactic fermentation takes place in barrel, then ageing continues for 18 to 30 months in new barrels, depending on the vintage. The final blend is decided after a rigorous selection of the lots, backed up by technical tastings. Virginie de Valandraud, created in 1992, is the estate\u2019s second wine.
