Critics’ scores and tasting notes
“Rich, ripe blackberries, dark cherries, mussel shells, cocoa powder and a chalky edge. Full-bodied and very flavorful, with nicely chewy tannins, lush berry fruit and a dense finish. Big but still fresh and juicy. A blend of 50% merlot and 50% bouchet (cabernet franc). Best after 2028.”
Arômes de Pavie is the second wine of Château Pavie, the Perse family estate in the south-east of Saint-Émilion. The name first appeared with the 2005 vintage, replacing the former Château Tour Simard label. It identifies a selection distinct from the grand vin, drawn mainly from young vines and from the choices made at blending. The grapes come from the Pavie vineyard, whose topography combines limestone plateau and mid-slope. The clay-limestone soils of the plateau lie on starfish limestone bedrock; lower down, the fine brown soils behave differently with regard to water. This diversity contributes to the complementary expressions of Merlot, Cabernet Franc and Cabernet Sauvignon. The plots are harvested by hand, with careful sorting. Vinification is adapted to the quality of the harvest, in temperature-controlled wooden vats. Barrel ageing continues work carried out to the same exacting standards as for the first wine, without seeking to reproduce its blend. Arômes de Pavie offers its own reading of the estate’s terroir. Its character combines richness of fruit with a polished structure and a more accessible expression in its youth. It remains fully linked to the identity of Pavie, while keeping its own place and personality as a second wine.
